Super Bowl Snack Recipes from Your G2X Team

If you’re looking for some inspiration to brighten up your Socially Distanced Super Bowl Weekend here are a few of our favorite party recipes. We hope you enjoy your weekend!


Spicy Stuffed Mushrooms

  • 30-36 medium to large mushroom caps
  • 1 package (1 pound) spicy sausage (the kind that can crumble)
  • 8 ounces of cream cheese
  • 3 ounces of shredded Monterrey Jack cheese
  • 1 tablespoon crushed red pepper flakes
  • 2 tablespoons parmesan cheese grated

Wash mushrooms.  Remove the stems.  Pat mushrooms dry with paper towels.

Preheat oven to 350 degrees.

Cook the sausage in a skillet.  Drain well.  Chop into crumb size pieces.

Combine the following in a mixing bowl – sausage, cream cheese, Monterrey Jack cheese and crushed red pepper.  Mix well.

Place 1 heaping teaspoon of above mixture into each mushroom cap.  Place mushrooms into a rimmed baking dish.  Sprinkle with parmesan cheese.  Bake for 20 minutes at 350 degrees.  Remove from oven and let cool for 2 minutes.

Comments:

You can prepare this before hand and bake just before serving.  I would not suggest freezing these as it will affect the mushrooms.

To more easily fill the mushrooms, once the filling has cooled a bit, I put it in a pastry bag or large zip lock freezer style bag and cut one of the corners off.  Then you can just squeeze the mixture into each mushroom.  If you’re not using a pastry bag, be sure to use a zip lock freezer style bag as a regular sandwich bag will break from squeezing or melt depending on how hot the mixture is.


Sombrero Dip 

  • 1 lb ground beef
  • 1/2 cup chopped onions
  • 1 and 1/2 teaspoon chili powder
  • 1 can kidney beans (with liquid)
  • 1/2 cup Hot & Spicy ketchup*
  • 8 oz package of Grated cheddar cheese

Add the ground beef and onion to a skillet. Brown the beef and drain.

Add the beef/onions, chili powder, kidney beans (and liquid), and ketchup to a baking dish.

Mash with a potato masher and mix well.

Bake at 350 for 15 minutes

Then add all of the grated cheddar on top, cover and bake for an additional 20 minutes.

Serve hot with Doritos.

*If you cannot find Hot & Spicy Ketchup, you can mix 1/2 cup ketchup with 2 teaspoons hot sauce to get a similar flavor. 


Best Ranch Bread

This bread is the perfect base for cheesy bread, open faced sandwiches, bruschetta and other quick, skip the condiment mess ideas, perfect for game day.

Ingredients

  • baguette or french loaf
  • ranch dressing

Directions

Slice the loaf on the diagonal so you get more surface area.

Brush liberally with ranch dressing.

Grill or bake until bread is browned and crispy. 15 min at 350 if you are baking.

For Cheesy Bread 

Remove from oven after five minutes, add grated cheese and continue baking.

For Sandwiches or Bruschetta

Offer a selection of thinly sliced meats – ham, turkey, roast beef – a selection of cheeses – perhaps other sandwich toppers like sliced tomato or lettuce – and let the gang build their own. With the bread already seasoned with the ranch dressing you can avoid the mess of condiments and cutlery.
